Serve this delicious soup with a nice curry and rice combination, papadams (an Indian Flatbread), or even regular ol’ breadsticks. 4 curry leaves
3 pounds of chopped tomatoes
2 teaspoons ground coriander
2 tablespoons mustard seeds
2 tablespoons canola oil
1 teaspoon paprika
1 teaspoon cumin seeds
1 teaspoon curry powder
1 teaspoon cayenne
1 teaspoon turmeric
1 teaspoons salt
1/2 cup non-fat plain yogurt
1/2 cup tomato paste
1/2 tablespoon sugar

You can enjoy the opportunity to adjust and enhance your soup to your liking by adding Ghee (Clarified Butter), Garlic, Onions, fresh Cilantro, a nice Ginger-Garlic paste, ground Black Pepper, ground Bay Leaf. If you prefer, try Sour Cream to top your soup instead of Yogurt.
You can further control your soup's consistency by adding some water or stock. Depending upon the texture you desire for the soup, it could be more or less than a cup. Just be mindful not too water it down too much.

- Heat the canola oil in a deep saucepan. Add cumin seeds, mustard seeds, and curry powder
- When the mustard seeds start to pop, pour in turmeric, coriander, curry powder, paprika, and cayenne
- Pour in sugar, tomato paste, salt, and tomatoes
- Cook about 20 minutes or until the tomatoes are soft and their skin separates from the flesh
- Divide the soup among 6 to 8 bowls
- Add 1 tablespoon of the yogurt into the center of each bowl
